Spring Pasta

The following pasta recipe is called Spring Pasta. It is simple to prepare and flavourful. It also looks lovely when served. A great way to use some of that early spinach!

Spring Pasta

2 Tbsp Basil Pesto

2 Tbsp Balsmaic Vinegar

1/4 tsp Pepper

About 2 cups uncooked pasta- I like Penne

4 slices bacon ( I used sodium reduced )

3 cups mushrooms

I cup onion

3 big handfuls baby spinach

12 or so cherry tomatoes, halved

2 grilled chicken breasts

Mix first 3 ingrediants together, set aside. Cook pasta.

While pasta is cooking, cook bacon until crisp. Don’t drain the fat add mushrooms and onions, cook about 5 minutes until veggies begin to soften. Add spinach leaves and tomatoes. Cook until spinach is wilted. Add chicken, cooked pasta and reserved sauce. Sprinkle with Parmesan or Feta cheese.

Serve Immediantely.
